Cauliflower Cheese Bake
Coliflor con Queso
1 medium cauliflower, separated into flowerets
2 tablespoons vegetable oil
1 medium onion, chopped
1 small green pepper, chopped
1 small tomato, chopped
1 garlic clove, minced
1 tablespoon green olives, chopped
1 teaspoon salt
1/4 cup dry bread crumbs
1 cup shredded Cheddar cheese
In a deep saucepan heat 1 inch salted water (1/2 teaspoon salt to 1 cup water) to
boiling. Place a steamer in the saucepan; add cauliflower. Cover and steam for 5
minutes; drain. Arrange steamed cauliflower in ungreased baking dish, 10 x 6 x 1-1/2
inches.
In a big skillet add oil and sauté onion until tender. Add green pepper, tomato,
garlic, olives and salt; simmer uncovered 5 minutes. Pour over steamed cauliflower.
Sprinkle with bread crumbs and cheese. Bake uncovered at 350 °F until cheese is
melted, about 15 minutes.
